Should I buy a 64GB or 256GB Quest 2?

For all but the most insatiable virtual reality adventurers, the 64GB Oculus Quest 2 will have more than enough space. VZfit is only 496MB as of this article's publishing and VZPlay comes in at under 1GB.

Most games are similarly sized and infrequently larger than a few Gigabytes. You should be able to have plenty of games installed with the 64GB model and can always delete and reinstall as needed (not our games of course).
